Do you think it is safe to go with marble?

I am considering white Marble (http://www.lightemprador.com) Counter (http://GialloFiorito.com) tops and (http://maplered.com) I keep seeing that they are not recommended for entire Counter (http://GialloFiorito.com) s--yet--I see them often in magazines and (http://maplered.com) they look BEAUTIFUL!  Do you think it is safe to go with them?  How do they need to be cleaned--I read that they stain easily--is that really true---how easily?  And lastly--what price should I be expecting to pay on average?  Thanks for all your help---Melodi.
